Lemon Bars

As I was going through stacks of old recipes I have saved over the years I came across this one for Lemon Bars so I decided to give it a whirl. What I liked about it was that it was easy. What I didn’t like was that there wasn’t enough lemon custard topping. I would definitely make this recipe again but double the custard amount!

Crust:

  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup sugar
Directions: Blend well and press into unbuttered 9 inch by 9 inch pan. Bake at 350 Farenheit for 2 minutes
Custard (recommend doubling this amount):
  • 1 cup sugar
  • 2 tbsp. flour
  • 1/4 tbsp baking powder
  • Juice of 1 lemon (3 tbsp)
  • 2 eggs (beaten)
Directions: Mix well and pour over bottom layer. Bake at 350 Farenheit for 25 minutes. Top with sifted icing sugar.
